  • 4 red bell peppers
  • 1 large onion
  • 2 vine tomatoes
  • 3 cloves garlic
  • 1 cup walnuts
  • 2 tablespoons pomegranate molasses (or balsamic vinegar)
  • ½ to 1 cup breadcrumbs
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon cumin
  • ½ teaspoon red pepper flakes
  • 1 teaspoon salt
  • 2 twists of black pepper (optional)
  • ½ cup pomegranate seeds
  • 1 tablespoon flat-leaf parsley (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C). Quarter the red bell peppers and tomatoes; cut the onion into six pieces. Place them on a baking tray, drizzle with olive oil, season with salt and optional black pepper, and roast for 30-40 minutes until charred.
  2. While roasting, heat olive oil in a skillet over medium heat. Sauté minced garlic with tomato paste, cumin, and red pepper flakes for about 3 minutes until fragrant.
  3. In a food processor or blender, combine roasted vegetables, sautéed garlic mixture, walnuts, and pomegranate molasses. Blend until creamy; if too liquidy, add breadcrumbs gradually until desired thickness is achieved.
  4. Adjust seasoning if needed before serving with garnishes like pomegranate seeds and chopped parsley.
