  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar; let sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt; gradually add to the yeast mixture while stirring until combined.
  3. Knead the dough by hand for about 8 minutes or use a stand mixer until smooth.
  4. Mix in chopped rosemary and grated Parmesan, form into a ball, cover with a towel, and let rise for about an hour or until doubled.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the risen dough; divide into 8 pieces. Flatten each piece, place a mozzarella cube in the center, seal it up into a ball, then roll each ball into a rope and twist into pretzel shape.
  7. Boil water with baking soda in a saucepan; carefully drop each pretzel in for about 30 seconds using a slotted spoon.
  8. Brush with melted butter and sprinkle with coarse salt before baking for 12-15 minutes until golden brown.
