  • 1 Egg
  • 1/3 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 1/2 cup Vegetable oil
  • 1 tsp Lemon zest
  • 3/4 cup Milk
  • 1/3 tsp Cinnamon
  • 2 cups Flour
  • 2 tsp Baking powder
  • 2 cups Strawberries (chopped)
  • 1/3 cup Strawberries (pureed)
  • 1 1/2 cups Powdered sugar
  • 1/2 tsp Vanilla extract
  • 12 tbsp Milk

Instructions

  1. Preheat your oven to 350°F (180°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a mixing bowl, whisk together vegetable oil, egg, lemon zest, granulated sugar, milk, and vanilla extract until well combined.
  3. Add flour, salt, baking powder, and cinnamon to the wet mixture. Mix gently until just combined.
  4. Fold in chopped strawberries gently until evenly mixed.
  5. Pour batter into the prepared loaf pan and spread evenly using an offset spatula.
  6. Bake for about 60 minutes or until a toothpick inserted comes out clean.
  7. Allow the bread to cool before drizzling with strawberry glaze made from pureed strawberries and powdered sugar.
