  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine table salt
  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup fruitcake fruit blend or your choice of dried fruit
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter
  • Dust with non-melting sugar or powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, spice mix, and sugar until well combined.
  3. In another bowl, beat the egg and mix in the buttermilk and melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients, folding gently until just combined; lumps are okay.
  5. Fold in the fruitcake blend and candied peel until evenly distributed.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 20 minutes or until a toothpick comes out clean when inserted into the center.
  8. Allow cooling for five minutes in the tin before transferring to a wire rack; dust with sugar before serving.
