  • 3 tbsp butter (divided)
  • 1 tbsp miso paste
  • 1 sweetheart cabbage (cut into 4 wedges)
  • ¼ cup panko breadcrumbs
  • ¼ tsp garlic powder
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat your oven to 200C/400F and cut the sweetheart cabbage into quarters.
  2. In a mixing bowl, combine 2 tablespoons of softened butter with the miso paste. Use a pastry brush to apply this mixture generously on all sides of each cabbage wedge.
  3. Place the coated wedges on a baking sheet and roast for about 30-35 minutes, until edges are charred and the inside is slightly crispy.
  4. While roasting, melt the remaining tablespoon of butter in a pan over medium heat. Add panko breadcrumbs and garlic powder, stirring continuously until golden brown.
  5. Once the cabbage is roasted, sprinkle toasted breadcrumbs over the wedges just before serving, garnishing with parsley if desired.
