  • 8 oz shredded colby jack cheese
  • 2024 street taco corn tortillas
  • Olive oil or cooking spray
  • Sour cream (for serving)
  • Salsa (for serving)
  • Fresh chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Arrange the corn tortillas on a baking sheet.
  3. Brush both sides of the tortillas with olive oil or spray with cooking spray.
  4. Fill each tortilla with a heaping tablespoon of shredded chicken and top it with cheese.
  5. Bake for 2 minutes until cheese melts.
