  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup sour cream
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of a muffin tin to form the crust.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, lemon juice, lemon zest, and vanilla extract until fully incorporated.
  5. Spoon the mixture over the crusts in the muffin tin and bake for 20-25 minutes until set.
  6. Allow to cool at room temperature, then refrigerate for at least two hours before serving.
