Ingredients

Scale
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter (melted)
  • 3 packages cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract (pure)
  • 1 cup caramel sauce (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs with melted butter until well mixed. Press into the bottom of a springform pan to form the crust.
  2. In another bowl, beat softened cream cheese until smooth with an electric mixer. Gradually mix in the sugar until combined. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. Pour the cheesecake filling over the crust in the springform pan and bake for about 45 minutes or until set but slightly wobbly in the center.
  4. Turn off the oven and allow cooling inside for about an hour before refrigerating for at least four hours or overnight.
  5. Drizzle caramel sauce over the cooled cheesecake before serving.
