  • 454 grams dry pasta (penne, fusilli, rotini)
  • 1 large red bell pepper (chopped)
  • ½ medium red onion (finely chopped)
  • ¾ cup pitted kalamata olives (halved)
  • 1 cup feta cheese (crumbled)
  • ½ cup parsley (chopped)
  • ½ cup sun-dried tomatoes (sliced thin)
  • ⅓ cup extra-virgin olive oil
  • 4 tablespoons fresh lemon juice
  • 1 small clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add pasta and cook until al dente according to package instructions. Drain and rinse under cold water.
  2. In a mixing bowl, combine cooled pasta with chopped bell pepper, onion, olives, feta cheese, parsley, and sun-dried tomatoes.
  3. In a jar, mix olive oil, lemon juice, minced garlic, salt, and pepper. Shake well.
  4. Pour the dressing over the salad and toss until everything is evenly coated.
  5. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
