  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • Juice of lemon
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked basmati rice
  • cucumber, sliced
  • 1 cup canned chickpeas, rinsed & drained
  • 1 cup Kalamata olives
  • Fresh dill for garnish
  • 1 cup Greek yogurt
  • cucumber, grated & squeezed
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Optional: pinch of chili flakes

Instructions

  1. Marinate the chicken in olive oil, lemon juice, minced garlic, oregano, salt, and pepper for at least 10 minutes.
  2. Preheat your grill or grill pan to medium-high heat and cook the chicken for about 5-6 minutes per side until fully cooked. Let it rest before slicing.
  3. Prepare the tzatziki by combining Greek yogurt, grated cucumber (drained), minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl.
  4. Assemble your bowls starting with cooked basmati rice as the base, topped with chickpeas, sliced cucumbers, grilled chicken slices, and tzatziki sauce.
