  • 14 ounces rigatoni pasta
  • 3 tablespoons butter
  • 1 onion, finely chopped
  • 1/3 cup plain flour (all-purpose)
  • 2 1/2 cups milk
  • 2 1/2 cups strong cheddar cheese, grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces canned tuna (drained and flaked)
  • 12 ounces canned sweetcorn (drained)
  • 1 cup frozen peas
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Boil the rigatoni in salted water until al dente. Drain and set aside.
  2. In a saucepan, melt butter over medium heat; add flour and stir to form a roux. Gradually whisk in milk until smooth.
  3. Combine the cooked pasta with the cheese sauce, flaked tuna, sweetcorn, peas, and parsley. Season with salt and pepper.
  4. Transfer the mixture to a greased baking dish and top with extra cheddar cheese.
  5. Preheat oven to 180°C (350°F) and bake for 15–20 minutes until golden brown.
