  • 60g butter
  • 2 large onions, coarsely chopped
  • 2 medium potatoes, coarsely chopped
  • 2 medium carrots, coarsely chopped
  • 3 garlic cloves, crushed
  • Zest and juice of 1 orange
  • 2 tsp mild curry powder
  • 1.8 liters vegetable or chicken stock
  • 2 x 400g cans chopped tomatoes
  • 2 eating apples, peeled and chopped
  • Salt and black pepper, to taste

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the chopped onions, potatoes, carrots, garlic, and orange zest. Cook gently for about 5 minutes until softened.
  2. Stir in the mild curry powder and cook for another 1–2 minutes to release the spices' flavors.
  3. Pour in the stock along with the orange juice, chopped tomatoes, and apples. Season with salt and black pepper. Bring to a simmer; cover and cook for 30 minutes.
  4. Remove the orange zest from the pot and blend the soup in batches until smooth using a blender or immersion blender.
  5. Return blended soup to the pot, reheat gently if necessary, adjust seasoning as needed, and serve hot topped with herb croûtes.
