  • 1 tbsp butter
  • 2 shallots
  • 2 cloves garlic
  • 56 sun-dried tomatoes
  • 2 tbsp tomato puree
  • 500ml vegetable stock
  • 150ml plant-based cream
  • 150g bow-tie pasta
  • 200g tofu
  • Fresh basil for garnish

Instructions

  1. Melt butter in a large saucepan over low-medium heat. Sauté diced shallots for 5-6 minutes until soft.
  2. Add minced garlic and cook for another minute.
  3. Stir in tomato puree, sun-dried tomatoes, garlic powder, onion powder, smoked paprika, oregano, cayenne pepper, salt, and pepper.
  4. Pour in vegetable stock and bring to a boil; add pasta and simmer for 7-8 minutes.
  5. Incorporate plant-based cream and adjust consistency if needed.
  6. Prepare tofu by slicing and coating with seasoned cornflour.
  7. Fry coated tofu in oil until golden brown on both sides.
  8. Serve crispy tofu on top of the pasta and garnish with fresh basil.
