  • ½ small head cauliflower (cut into florets)
  • 8 oz cherry tomatoes
  • 1 small red onion (sliced)
  • 8 oz fresh mushrooms (sliced)
  • 12 baby carrots (diced)
  • 1 can water chestnuts (sliced)
  • 1 can pitted black olives (sliced)
  • ¾ cup vegetable oil
  • â…“ cup red apple vinegar
  • 3 garlic cloves (minced)
  • 1½ tablespoons granulated sugar
  • 2 teaspoons Italian seasoning
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine broccoli, cauliflower, cherry tomatoes, red onion, mushrooms, carrots, water chestnuts, and black olives.
  2. In a mason jar, mix vegetable oil, vinegar, garlic, sugar, Italian seasoning, Worcestershire sauce, and salt. Secure the lid and shake well until combined.
  3. Pour the dressing over the mixed vegetables and toss to coat evenly. Cover and refrigerate overnight to allow flavors to meld.
