  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (approximately 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together the flour, baking soda, and salt; set aside.
  3. In a stand mixer, cream the softened butter and brown sugar until fluffy. Add maple syrup and mix for an additional minute.
  4. Incorporate eggs one at a time, followed by mashed bananas and vanilla extract until well combined.
  5. Gradually mix in half of the dry ingredients, then add yogurt or sour cream. Stir in remaining dry ingredients gently; fold in nuts.
  6. Pour the batter into the prepared pan, sprinkle with reserved nuts, and bake for 50-60 minutes until a toothpick comes out clean.
  7. Drizzle warm maple syrup over the bread once cooled slightly.
