  • 1/4 cup heavy whipping cream
  • 3 tbsp butter
  • Zest and juice of 1 lemon
  • 3 tbsp grated Parmesan cheese
  • 1/4 cup chicken broth
  • 3 tsp minced garlic
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp Creole seasoning
  • 2 tsp minced garlic
  • 1 tbsp butter
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 1/2 cup heavy whipping cream
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a cast-iron skillet over medium-high heat.
  2. Season the sea bass fillets with salt, pepper, and Creole seasoning.
  3. Sear the fish in melted butter for 3–4 minutes on one side until golden, then flip and cook for another 2 minutes.
  4. Transfer the skillet to the oven and bake for 8–10 minutes until flaky.
  5. In a separate pan, saute garlic in butter; add spinach until wilted, then stir in cream and seasonings.
  6. For the sauce, melt butter, whisk in flour to form a roux, gradually add chicken broth and cream, then mix in Parmesan and lemon zest/juice.
  7. Serve the creamed spinach topped with sea bass drizzled with lemon-Parmesan sauce.
