  • 6 oz fresh spinach (or frozen, thawed and drained)
  • 8 oz cream cheese
  • 1/2 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup white cheddar cheese
  • 5 cloves garlic
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp Panko breadcrumbs
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 Tbsp unsalted butter (melted)

Instructions

  1. Prepare spinach by washing and chopping fresh or thawing and draining frozen spinach.
  2. Sauté minced garlic in olive oil over medium heat until fragrant.
  3. In a mixing bowl, combine sautéed garlic with cream cheese, heavy cream, Parmesan cheese, white cheddar cheese, salt, black pepper, and garlic powder. Mix until smooth.
  4. Fold in the spinach until well combined.
  5. Transfer to a baking dish and top with a mixture of Panko breadcrumbs and melted butter.
  6. Bake at 350°F (175°C) for about 15 minutes or until bubbly and golden brown.
