  • 1 tbsp fresh ginger, grated
  • Zest and juice of 1 lemon
  • 2 tbsp honey
  • 1 tbsp soy sauce (gluten-free if needed)
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1/4 cup diced red onion
  • 1/4 cup mayonnaise
  • 12 tsp sriracha (adjust for spice preference)

Instructions

  1. Rinse the rice under cold water until clear. Combine with coconut milk, water, and salt in a pot or rice cooker. Cook according to package instructions.
  2. In a bowl, mix ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper for the glaze.
  3. Heat olive oil in a skillet over medium-high heat. Add chicken in a single layer; cook until browned (5–7 minutes). Pour in the glaze; cook an additional 5 minutes until chicken is cooked through.
  4. For the salsa, combine pineapple, mango, red onion, lime juice, cilantro (if using), salt, and pepper in a bowl.
  5. Serve the glazed chicken over coconut rice topped with pineapple mango salsa.
