  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • 2 lemons (one for juice, one for slices)
  • 4 cloves garlic (minced)
  • 1/2 cup unsalted butter
  • Olive oil
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash, peel if desired, and cube the potatoes. Toss in olive oil, salt, pepper, and paprika.
  3. Spread potatoes on one side of the baking sheet and roast for 25 minutes until crispy.
