Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and honey until light and fluffy.
  3. Add rolled oats and flour; mix until combined.
  4. Press mixture evenly into the bottom of a greased 9×9 inch baking pan.
  5. Bake for 15 minutes or until golden brown around the edges.
  6. In another bowl, whisk together eggs, lemon zest, lemon juice, and flour until smooth.
  7. Pour filling over baked crust and return to the oven; bake for an additional 20-25 minutes.
  8. Allow cooling completely before cutting into squares.
