  • 4 to 5 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang
  • ¼ cup brown sugar
  • ½ cup soy sauce (or coconut aminos)
  • 2 cups beef broth

Instructions

  1. Season beef chuck roast pieces with kosher salt.
  2. Heat vegetable oil in a Dutch oven over medium-high heat and sear the beef until browned on all sides (3-4 minutes per side). Remove and set aside.
  3. In the same pot, add sliced onion, minced garlic, and grated ginger; sauté until fragrant (2-3 minutes).
  4. Stir in gochujang, brown sugar, soy sauce (or coconut aminos), and beef broth; bring to a simmer.
  5. Return seared beef to the pot; cover and reduce heat to low. Cook for about 3-4 hours or until tender.
