  • 1 bunch (10 oz) fresh spinach
  • 1 clove garlic, finely minced
  • 1 stalk green onion, chopped
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and cut it into 2-inch pieces.
  2. Boil water in a pot with a pinch of salt. Blanch the spinach for about 30 seconds until just wilted.
  3. Transfer the blanched spinach into an ice bath to cool quickly and retain color.
  4. Squeeze out excess water from the cooled spinach.
  5. In a mixing bowl, combine the spinach with minced garlic, chopped green onion, soy sauce, salt, sesame oil, and toasted sesame seeds. Mix well.
  6. Serve immediately or chill for better flavor.
