  • 1 1/2 cups walnuts, raw and unsalted
  • 1/2 cup pumpkin seeds, unshelled
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1/3 cup honey or maple syrup
  • 1/4 teaspoon chipotle powder
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes

Instructions

  1. Preheat the oven to 350°F (175°C). Spread walnuts and pumpkin seeds on a baking sheet and toast for 10 minutes until fragrant.
  2. In a mixing bowl, whisk together honey or maple syrup, chipotle powder, olive oil, balsamic or apple cider vinegar, dijon mustard, fig jam, orange peel zest, and fresh orange juice. Season with salt and pepper to taste.
  3. In a large salad bowl, layer the salad greens and frisée leaves first, followed by diced apples or pears and sliced avocados.
  4. Top with toasted walnuts, pumpkin seeds, and pomegranate seeds. Crumble your choice of cheese over the top if desired.
  5. Drizzle the dressing over the salad just before serving and toss lightly.
