  • 1 pound Ground Beef (80 lean / 20 fat)
  • 1 pound Ground Lamb (or additional beef)
  • ½ bunch Parsley
  • 4 Garlic Cloves
  • ½ Yellow Onion
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Onion Powder
  • 1 tablespoon 7 spices
  • ½ tablespoon Coriander Powder
  • 1 tablespoon Sumac
  • ½ tablespoon Aleppo Pepper
  • ¼ tablespoon Black Pepper
  • Salt to taste (2-3 teaspoons)
  • ½ teaspoon Baking Soda

Instructions

  1. Chop parsley and garlic; combine in a mixing bowl with ground beef and lamb.
  2. Chop onion and squeeze out excess liquid using a paper towel; add to the meat mixture along with spices.
  3. Mix thoroughly by hand, ensuring even distribution of all ingredients.
  4. Cover and refrigerate for about 45 minutes to meld flavors.
  5. Shape the mixture onto skewers and brush with reserved onion liquid before grilling on medium-low heat until cooked through.
