  • 4 cups sugar
  • 5 cups filtered water

Instructions

  1. Thoroughly wash the lemons and zest them using a zester or vegetable peeler, avoiding the white pith.
  2. In a large glass jar, combine the lemon zest with the 100-proof lemon juice. Seal tightly and store in a cool, dark place for two weeks, shaking gently every few days.
  3. Prepare the syrup by heating sugar and water in a saucepan until dissolved. Let it cool.
  4. After two weeks, strain the lemon infusion through a fine mesh strainer into another container and mix with the cooled syrup.
  5. Transfer your limoncello into clean bottles using a funnel, seal tightly, and refrigerate until chilled before serving.
