  • 1 cup cold unsalted butter
  • 1 tablespoon granulated sugar
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1/2 cup cold whole milk
  • 1/4 cup cold water
  • 1/2 cup bittersweet chocolate chips or chopped chocolate
  • 1/2 cup sliced almonds
  • 1 egg (for egg wash)

Instructions

  1. In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add cold milk and water to form a soft dough. Knead gently until smooth.
  2. Roll out half of the chilled butter into a rectangle and place it in the center of the rolled-out dough. Fold over edges to encase butter.
  3. Roll out the dough into a long rectangle and fold it into thirds like a letter. Repeat this process two more times while keeping it chilled.
  4. Roll out the laminated dough into triangles, placing chocolate chips and almonds at the base of each triangle before rolling from base to tip.
  5. Arrange shaped croissants on a parchment-lined baking sheet and let rise until doubled in size (about 30 minutes).
  6. Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 18 minutes or until golden brown.
