  • 1/2 cup unsweetened cocoa powder

  • 1/4 cup vegetable oil
  • 1/3 cup sour cream (or Greek yogurt)
  • 1 1/2 cups finely grated zucchini
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla essence

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In one mixing bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, blend the eggs with vegetable oil, sour cream, sugars, and vanilla until smooth.
  4. Fold the grated zucchini into the wet mixture.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Stir in half the chocolate chips.
  6. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  7. Bake for about 55 minutes or until a toothpick comes out clean when inserted into the center.
  8. Once done, cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
