  1. Preheat the oven to 190°C (375°F).
  2. Trim the tops off the carrots and place them in a roasting tray. Drizzle with olive oil, sprinkle with cinnamon, salt, and black pepper. Roast for 30 minutes until tender.
  3. In a pestle and mortar, combine chopped carrot tops with lemon juice and olive oil to create a chunky green sauce.
  4. In a mixing bowl, whisk together Greek yogurt and crumbled feta, seasoning to taste.
  5. Add drained chickpeas to the roasting tray after 30 minutes and roast for an additional 15 minutes until crispy.
