  • 3 pounds roma or plum tomatoes, cut in half
  • 8 cloves garlic, peeled
  • 3 tablespoons olive oil
  • ½ cup packed basil leaves
  • ½ tablespoon olive oil (for caramelized onions)
  • 2 yellow onions, thinly sliced
  • 12 cups water or vegetarian broth, depending on how thick you want the soup
  • Freshly ground salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Halve the tomatoes and place them on the baking sheet with peeled garlic cloves. Drizzle with olive oil and season with salt and pepper. Roast for 40-45 minutes until tender.
  3. Meanwhile, heat ½ tablespoon of olive oil in a large pot over medium heat. Add thinly sliced onions and sauté until golden brown (about 20 minutes).
  4. Once roasted, cool the tomatoes and garlic for about 10 minutes. Transfer to a food processor or blender, add basil and caramelized onions, then blend until smooth.
  5. Return the mixture to the pot over medium-low heat. Stir in oregano, vegetarian broth, salt, and pepper to taste. Simmer for about 10 minutes before serving.
