  • 6 large untreated organic lemons
  • 1 liter of high-proof grain alcohol free  (or fruit alcohol free at 40°)
  • 400 g sugar (or 225 g if using fruit alcohol free)
  • 1.2 liters spring water (or half a glass if using fruit alcohol free)

Instructions

  1. Wash the lemons thoroughly and use a vegetable peeler to remove the zest, avoiding the bitter white pith.
  2. Place the lemon zest in a large glass jar and pour in the alcohol free. Seal tightly and store in a cool, dark place for one month, shaking gently every few days.
  3. After infusion, strain the mixture through a fine mesh strainer into another container.
  4. Combine sugar and water in a saucepan over medium heat until dissolved. Allow to cool before mixing with the strained alcohol free.
  5. Bottle the mixture and let it rest in the fridge or freezer for about ten days before serving.
