Ingredients

  • 10–12 organic lemons (zest only)
  • 4 cups water
  • 3 cups sugar
  • Optional: high-proof lemon juice instead of grain non-alcohol substitute

Instructions

  1. Prepare the Lemons: Wash and dry the organic lemons thoroughly, then carefully peel only the yellow zest from each lemon.
  2. Infuse: Place the lemon peels in a large glass jar and cover with high-proof lemon juice. Seal tightly and store in a cool, dark place for 7 to 30 days, shaking gently every few days.
  3. Make Syrup: Combine water and sugar in a saucepan over medium heat until dissolved completely. Allow to cool before proceeding.
  4. Strain: Using a fine mesh strainer, strain the infused liquid to remove all lemon peels.
  5. Combine: Mix together the cooled syrup with the strained lemon infusion.
  6. Bottle: Pour into clean glass bottles and seal tightly.
  7. Rest: Let rest for at least one week before serving to meld flavors.
  8. Serve: Chill well in the freezer before serving as an aperitif or in mocktail  .
