  • 1 ½ cups heavy cream
  • ½ cup unsalted butter
  • 5 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tsp cornstarch
  • Kosher salt and freshly cracked black pepper to taste
  • â…“ cup grated parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes (about 1/8-inch thick) and set aside.
  3. In a mixing bowl, whisk together heavy cream and cornstarch until smooth. Stir in melted butter, minced garlic, thyme, salt, and pepper until well combined.
  4. Layer half of the sweet potato slices in a greased baking dish and pour half of the garlic butter mixture over them. Repeat with remaining sweet potatoes and sauce.
  5. Sprinkle grated parmesan cheese on top if desired.
  6. Cover with aluminum foil and bake for approximately 40 minutes or until tender. Uncover during the last few minutes for a crispy top.
