  • 1 tsp salt
  • 2/3 cup whole milk (lukewarm)
  • 2 tbsp unsalted butter (melted)
  • 1 cup unsalted butter (cold)
  • 1 large egg, beaten
  • 1 tbsp milk

Instructions

  1. Whisk flour, sugar, salt, and yeast in a bowl. Add lukewarm milk and melted butter; mix until a shaggy dough forms.
  2. Knead the dough until smooth and elastic (about 5 minutes). Let rise in a greased bowl for about 45 minutes.
  3. Roll cold butter between parchment sheets into a square; chill.
  4. Roll risen dough into a square, place butter on top, then fold corners over to enclose it.
  5. Roll into a rectangle; fold like a letter. Chill for 20 minutes and repeat twice more for layering.
  6. Roll out to shape triangles, roll from wide end to tip; let rise on parchment-lined sheets for about an hour.
  7. Preheat oven to 400°F (200°C). Brush croissants with egg wash; bake for 20-25 minutes until golden brown.
