  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Pull the butter, heavy cream, and eggs out of the refrigerator.
  2. Measure the heavy cream into a liquid measuring cup. Whisk in one large egg and one egg yolk while reserving the remaining egg white for brushing the scones. Chill this mixture in the freezer.
  3. In a food processor bowl, combine all-purpose flour, granulated sugar, baking powder, chai spice blend, and kosher salt. Pulse several times until everything is mixed well.
  4. Add the cold butter cubes to the dry mixture in the food processor. Pulse about 25–30 times until the mixture resembles coarse crumbs with some larger butter pieces still visible.
  5. Gradually add the chilled cream and egg mixture into the food processor while pulsing until a dough starts to form. Transfer this dough onto a lightly floured surface and shape it into a disc. Wrap in plastic wrap and freeze for about 30 minutes.
  6. After chilling, roll out the dough on a floured surface to about one inch thick. Cut into wedges or mini triangles using a sharp knife or bench scraper.
  7. Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper or use a Silpat mat. Place your shaped scones onto the prepared baking sheet and brush them with reserved egg white.
  8. Bake the scones for about 20–22 minutes until golden brown. Allow cooling before glazing by whisking together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until combined.
  9. Dip each cooled scone’s top into the glaze twice for an extra thick coating. Let it set before serving—enjoy your delightful homemade chai scones!
