  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • ½ cup crumbled feta cheese
  • ½ cup chopped fresh parsley or cilantro
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine with 2 cups of water or vegetable broth in a pot. Bring to a boil, then cover and simmer for about 15 minutes until liquid is absorbed. Allow cooling.
  2. While the quinoa cooks, chop cherry tomatoes and cucumber into bite-sized pieces. Mix in chopped herbs.
  3. In a large mixing bowl, combine cooled quinoa, drained chickpeas, chopped veggies, and crumbled feta.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
