  • 1/2 tsp vanilla extract
  • 1/2 cup cold, unsalted butter, diced
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup semi-sweet chocolate chips
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2/3 cup unsweetened, Dutch-processed cocoa powder
  • 1/3 cup all-purpose flour
  • 1/4 tsp coarse Kosher salt
  • 12 tsp instant espresso powder, optional
  • 4 oz good-quality dark chocolate, around 55-60% cacao
  • 4 oz heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. For the shortbread layer, mix 1 cup flour, 1/3 cup sugar, 1/2 tsp salt, 1/2 tsp vanilla extract, and cold butter until crumbly. Press into the pan and bake for about 15 minutes until golden.
  3. For the brownie layer, melt together 1/2 cup butter and 1/2 cup chocolate chips until smooth. Stir in 1 cup sugar, then add eggs one at a time along with 2 tsp vanilla extract. Sift in cocoa powder, flour, and salt; mix until combined.
  4. Pour the brownie batter over the baked shortbread and bake for another 25 minutes or until a toothpick comes out moist.
  5. For the ganache topping, heat heavy cream until simmering and pour over chopped dark chocolate. Stir until smooth.
  6. Once cooled completely, pour ganache over brownies and refrigerate for about an hour before slicing.
