  • 1 large sweet potato
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp for chicken)
  • 1 tsp olive oil (for potatoes)
  • Salt & black pepper to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Chili flakes (optional)
  • Lemon wedge (optional)
  • Fresh herbs (optional)

Instructions

  1. Preheat oven to 200°C (400°F). Season chicken breasts with olive oil, salt, pepper, paprika, and garlic powder; place on a baking sheet. Bake for 20-25 minutes or until cooked through.
  2. Toss sweet potato rounds with olive oil, salt, and optional spices; spread on another baking sheet and roast for 25 minutes, flipping halfway.
  3. Steam broccoli in a pot over boiling water for 5-6 minutes until tender-crisp.
  4. Once cooked, divide all components into meal prep containers.
