  • 3 lbs lamb shoulder, bone-in or boneless
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, smashed
  • 1 cup beef or vegetable broth
  • 1/2 cup dry apple vinegar (optional)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup fresh mint leaves, finely chopped
  • 1/4 cup flat-leaf parsley, finely chopped
  • 2 garlic cloves, minced

Instructions

  1. Season the lamb generously with salt, black pepper, rosemary, and thyme.
  2. Heat olive oil in a skillet over medium-high heat, sear the lamb on all sides until browned (about 3–4 minutes per side).
  3. Place sliced onions and smashed garlic at the bottom of a slow cooker. Add the seared lamb on top, then pour in beef or vegetable broth along with apple vinegar if using.
  4. Cover and set the slow cooker to low heat. Cook for 6–8 hours or until fork-tender.
  5. While the lamb cooks, combine chopped mint leaves, parsley, and minced garlic in a mixing bowl for the gremolata.
  6. Once cooked, let the lamb rest briefly before slicing, then serve topped with mint gremolata.
