  • 60 ml milk
  • 120 ml water
  • 21 g active dry yeast
  • 50 g sugar
  • 550 g Manitoba flour or bread flour
  • 2 eggs
  • 1 egg yolk
  • 70 g unsalted butter
  • 750 ml vegetable oil for frying
  • 350 g chocolate spread
  • 360 g apricot jam

Instructions

  1. In a bowl, combine lukewarm milk, water, yeast, and sugar. Let it sit for about 10 minutes until frothy.
  2. In a stand mixer, mix flour, eggs, egg yolk, salt, and the yeast mixture. Knead for 6-8 minutes until elastic. Add butter and knead until smooth.
  3. Cover the bowl with cling film and let it rise at room temperature for 1 to 1.5 hours until doubled in size.
  4. Roll out the dough to about 2 cm thick on a floured surface and cut with a heart-shaped cookie cutter.
  5. Let the shapes rise again for about an hour until they triple in size.
  6. Heat oil in a pan between 170 – 180°C (340 – 355°F) and fry doughnuts until golden brown on both sides.
  7. Dust with sugar after frying and fill with warm apricot jam or chocolate spread using a pastry bag.
