  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 tablespoon avocado oil
  • 1/4 cup coconut aminos
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon garlic cloves, minced
  • 2 cups cooked green beans
  • 1 cup cooked white rice
  • Sesame seeds, for garnish

Instructions

  1. Prepare the chicken by cutting it into small cubes. Cook the white rice and green beans as per package instructions.
  2. Heat avocado oil in a skillet over medium-high heat for about 1 minute. Add the cubed chicken and sauté until thoroughly browned, approximately 10-12 minutes.
  3. While the chicken cooks, whisk together coconut aminos, honey, toasted sesame oil, rice vinegar, minced garlic, lime zest, lime juice, black pepper, and ground ginger in a bowl until combined.
  4. Remove cooked chicken from the skillet and set aside. Pour the sauce mixture into the hot skillet and cook for about 3-5 minutes until it thickens slightly.
  5. Return the chicken to the skillet and coat it thoroughly with the sauce.
  6. Serve warm over cooked white rice and green beans, garnished with sesame seeds.
