  • 4 cups butternut squash, diced and peeled
  • 2 tbsp canola oil
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tbsp maple syrup
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup couscous
  • 1 cup boiling water
  • 1 1/2 tsp canola oil
  • 1 1/2 cups red onion, minced
  • 1 lb ground turkey
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine diced butternut squash with canola oil, nutmeg, cinnamon, maple syrup, salt, and black pepper. Toss until well-coated.
  3. Spread the seasoned squash evenly on a baking sheet. Roast in the preheated oven for about 25-30 minutes or until tender and slightly caramelized.
  4. While the squash is roasting, place couscous in a bowl. Pour boiling water over it, cover with plastic wrap or a lid, and let it sit for about 5 minutes until fluffy.
  5. In a large skillet over medium heat, add canola oil. Once hot, add minced red onions and sauté until translucent. Then add ground turkey along with lemon pepper seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Cook until browned.
  6. Stir in cooked couscous and chopped swiss chard into the turkey mixture. Cook for an additional few minutes until everything is heated through.
  7. Once roasted butternut squash is ready, serve it alongside or mixed into the turkey-couscous filling. Drizzle fresh lemon juice over everything before enjoying.
