  • 500 g chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 1 cup cooked mixed rice (brown, wild, and white blend)

Instructions

  1. Gather all ingredients: chop chicken, slice peppers, trim green beans, and mince garlic.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden brown (5-7 minutes), then remove from the pan.
  3. In the same pan, add more oil if needed; sauté garlic until fragrant (30 seconds). Add broccoli, green beans, red bell pepper, and yellow bell pepper; stir-fry for about 3-4 minutes until tender-crisp.
  4. Return chicken to the pan; add soy sauce, honey or maple syrup, sesame oil, salt, and pepper. Stir well for another 2 minutes until heated through.
  5. Serve over warm mixed rice.
