  • 1 large carrot (shredded)
  • 1 whole avocado (sliced)
  • 1 cup baby cucumbers (sliced)
  • 2 stalks spring onions (chopped)
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp tomato paste
  • 2 tbsp pineapple juice
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 cup cooked edamame beans
  • 1 tbsp toasted sesame seeds

Instructions

  1. Prepare the rice according to package directions and set aside.
  2. In a skillet over medium-high heat, cook seasoned chicken thighs in sesame oil for 6-7 minutes on each side until golden brown. Let rest before slicing.
  3. Whisk together soy sauce, maple syrup, apple cider vinegar, tomato paste, pineapple juice, sriracha, and sesame oil in a bowl.
  4. Assemble your bowl by layering jasmine rice, sliced chicken, and fresh veggies. Drizzle with dressing and top with toasted sesame seeds.
