3 cups cooked chicken breast (cubed)
1 cup celery (sliced)
3 ounces water chestnuts (sliced then roughly chopped)
1½ cups seedless grapes
1 cup chopped macadamia nuts
1 (20-ounce) can pineapple chunks (drained)
½ cup unsweetened coconut flakes (toasted)
1½ cups mayonnaise
½ cup coconut milk
½ tablespoon curry powder
Juice of half a lemon
Instructions
In a large mixing bowl, combine the cubed chicken, sliced celery, chopped water chestnuts, grapes, toasted coconut flakes, pineapple chunks, and macadamia nuts. Reserve some coconut flakes and nuts for garnish.
In another bowl, whisk together mayonnaise, curry powder, soy sauce, lemon juice, and coconut milk until smooth.
Pour the dressing over the salad mixture and gently stir until everything is well coated.
Cover with plastic wrap or a lid and refrigerate for at least 8 hours or overnight.
Before serving, garnish with reserved nuts and coconut flakes.
