  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup soy sauce (or coconut aminos)
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Cooked jasmine rice
  • 1/4 cup chopped green onions
  • 1/4 cup toasted coconut flakes
  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a bowl, mix garlic powder, onion powder, paprika, black pepper, and salt. Rub this mixture on the chicken breasts.
  3. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes per side until golden brown.
  4. In another bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, and grated ginger.
  5. Remove cooked chicken from skillet; add sauce to skillet and simmer for 3-4 minutes.
  6. Slice the chicken and assemble bowls with rice as the base; top with sliced chicken and fresh vegetables.
  7. Drizzle sauce over each bowl and garnish with green onions and coconut flakes.
