  • 4 ripe peaches (halved and pitted)
  • 1 cup fresh blueberries
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup toasted pecans or walnuts (chopped)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat and lightly oil the grates.
  2. Brush the cut sides of the peaches with olive oil and place them cut-side down on the grill. Grill for about 3-4 minutes until marked and slightly softened. Remove from the grill and let cool before slicing into wedges.
