  • 1 chicken breast, cut into chunks
  • 1 cup sweet potatoes, peeled & cubed
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). In a mixing bowl, toss sweet potato cubes with half of the olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking tray and roast for 20-25 minutes until golden and tender.
  2. While the sweet potatoes roast, season chicken chunks with garlic powder, onion powder, salt, and pepper. Heat a grill pan over medium heat with a drizzle of oil; grill the chicken for about 6-8 minutes until charred and cooked through.
  3. In another pan, heat the remaining olive oil and sauté broccoli florets for about 5-6 minutes until bright green and tender. Season with salt and optional chili flakes.
  4. Assemble the plate by arranging grilled chicken, roasted sweet potatoes, and sautéed broccoli together. Optionally drizzle with lemon juice or additional spices before serving.
