  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 small red onion, thinly sliced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato wedges with olive oil, smoked paprika, and salt; bake on a sheet for 20-25 minutes until crispy.
  3. Season chicken breast with olive oil, paprika, garlic powder, salt, and pepper; grill for 6-7 minutes per side until cooked through.
  4. Mash avocado with lime juice, salt, and pepper for guacamole.
  5. Combine cherry tomatoes, diced avocado, red onion, olive oil, salt, and pepper in a bowl.
