  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. In a mixing bowl, combine olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Coat the chicken breasts in the marinade.
  2. Preheat your grill or grill pan over medium-high heat. Grill the chicken for 5-6 minutes per side until fully cooked.
  3. Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast at 200C (390F) for about 20 minutes until crispy.
  4. In a saucepan, melt butter over medium heat; stir in flour. Gradually whisk in milk until thickened, then add minced garlic and grated Parmesan until smooth.
  5. Slice grilled chicken and assemble bowls with chicken over Brussels sprouts, drizzling with sauce.
