  • 1 cup diced cucumber
  • 1 cup crumbled feta cheese
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or paprika
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with olive oil, garlic powder, Italian seasoning (or paprika), salt, and pepper. Grill or pan-sear for 5–6 minutes on each side until fully cooked. Let rest before slicing.
  2. In a mixing bowl, layer arugula (or mixed greens), halved cherry tomatoes, diced cucumber, crumbled feta cheese, and garlic croutons. Top with sliced avocado and grilled chicken.
  3. If desired, drizzle dressing over the salad and sprinkle with cracked black pepper before serving.
